For those of you who have been dying, wondering how Ive been feeling since starting the gluten free diet one week ago.....Well the verdict isn't anything too exiting to be honest, but thanks for your concerns.
The first day after going gluten free, I felt great, but in the back of my mind I was thinking it was probably just mind of matter. I thought that I was supposed to feel well, so I did. That and a combination of being more healthy for a day was probably the trick.
Then the second day the nauseousness came back...BIG bummer. To help me feel better (in my head, not my stomach), I read online that it usually takes a few weeks to really get all the gluten out, so I kept on.
Now that it was been a little over a week, I haven't really noticed anything too different. I haven't really had any headaches which is awesome in my book, but yesterday was awful with the nauseousness again. I had to leave work early I was feeling so sick.
This is so frustrating! I'm headed back to the doctor soon. I really hope to figure something out. I know its only been a little over a week and it might take a little longer, but I'm ready to feel good now!
Here are a few things that Mr. Hunt and I have been eating with no gluten. Its actually been pretty interesting finding out what has it and what doesn't, you would be very surprised.
Gluten free pizza from Fuel
Tacos with corn tortillas (yuck! I don't like corn tortillas, so Ill stick with taco salad)
Tostitos chips (I was surprised by this one) so I have been making tons of nachos! YUM
Betty Crocker Gluten Free Brownies (very yummy...they taste no different to me). I also have her gluten free yellow cake and chocolate chip cookies but haven't tried them yet, Ill let you know how it goes.
I can eat Skittles and Starburst too!
For lunch I have some sliced cheese, popcorn, peanuts, m&ms, grapes, and an apple. This is what I have had everyday but one day where I had a salad. Its already getting old so I have to think of some other gluten free lunches to bring to work.
So, I'm going to keep giving this a shot for about a month and see what happens. I will also see what happens at my Doctor appointment. I just wanted to fill y'all in :) So nice of me right?
Love,
Gluten Free Jennifer
